A paper was published on May 17, 2022 entitled: “Amyloidogenesis of SARS-CoV-2 Spike Protein” and it nails this down in my opinion. They propose that the protease neutrophil elastase (NE) which is overexpressed at sites of inflammation, cut the spike protein into amyloidogenic bits. This means that those amyloidogenic bits produce amyloid deposits.
